> Cooking spray or paper liners
> 1 (8.5 oz) pkg corn muffin mix, like Jiffy
> 1/2 cup whole milk
> 2 large eggs
> 3 tbsp unsalted butter, melted
> 1 1/4 cups store-bought pimiento cheese, divided
Preheat oven to 400°F. Spray each cup in a standard 12-cup muffin pan with the cooking spray or line cups with paper liners. To a large bowl, add the corn muffin mix, milk, eggs, butter, and ½ cup pimiento cheese. Stir to combine.
Divide batter evenly among prepared muffin cups. Add 1 tbsp of the remaining ¾ cup pimiento cheese to each muffin. Bake 15–20 min., until golden brown and a toothpick inserted in center of muffin comes out clean. (Avoid inserting the toothpick in the gooey melted cheese part.)
