Pineapple “Beer Can” Chicken

Ingredients

> 1 large foil pan
> 2 fresh pineapples
> 2 (4 - 41/2 lbs) whole chickens, giblets removed
> 4 (0.20 oz) packets OB Tuscan Rustic Herb Seasoning
> 1/2 cup Nature's Promise® Organic Honey Barbecue Sauce

Set half of grill to medium-high (leave other half off). Place the foil pan under grill grate on top of burners that are off.

With a sharp chef’s knife, cut peel from pineapples, then cut all the flesh away, leaving just 2½-inch cylindrical cores. Trim each to height of 4½ inches, resembling a soda can. Save pineapple flesh for another use.

Pat the chickens dry and trim away any excess fat. Rub the seasoning all over outsides and insides of chickens. Season all over with salt. Insert pineapple cores into chickens’ cavities.

Arrange chickens upright over foil pan on cooler section of grill with backs facing toward hotter section, balancing on pineapple cores. Cover and cook 1 hour 10 min.

Brush chickens all over with barbecue sauce. Reduce heat to medium. Grill another 10–15 min., covered, until thermometer inserted into thickest part of chickens reaches 165°F. Remove chickens from grill and let stand 10 min. Remove pineapple cores. Cut up chicken to serve.
