Pork and Green Bean Salad with Sesame Dressing

Ingredients

> 1 tbsp sesame seeds
> 1 tbsp vegetable oil
> 8 oz Nature's Promise Naturals centre cut boneless pork chops
> 1 (12 oz) bag green beans
> 1/2 small red onion
> 1 1/2 cups Rainbow salad mix (shredded broccoli, cauliflower, carrots, & cabbage)
> 2 tbsp tamari  (wheat-free soy sauce)
> 1 tbsp sesame oil
> 2 tbsp lime juice

Heat a frying pan without oil or butter and dry-toast the sesame seeds 2 min., or until golden. Set aside to cool. In the same skillet, heat the oil over medium heat and cook the pork chops for approximately 8 min., turning once, until golden brown and cooked through. Set aside, loosely covered with foil.

While the chops cook, bring a pot of water to a boil. Cut the beans diagonally into ½-inch pieces. Cook for 2 min., or until crisp tender. Drain and rinse under cold running water, then place the beans in a serving bowl. Thinly slice the red onion and add to the beans along with the salad mix.

Whisk together the tamari, sesame oil, lime juice and toasted sesame seeds in a small bowl. Pour over the vegetables and toss to combine. Cut the pork into slices and arrange on top of the salad.
