Ingredients

4 (6 oz) salmon fillets

2 tbsp olive oil, divided

1/2 medium white onion
>
1 tbsp minced garlic
>
2 tbsp tomato paste
>
2 tsp fresh minced thyme
>
1/2 cup Bourbon
>
1/4 cup maple syrup
>
1 tbsp mustard

Preheat a small sauce pan over medium heat and a 12 inch skillet over medium high heat. Add 1 tbsp of olive oil to each pan.

Grate the onion on a cheese grater or finely chop. Add onion to the sauce pot with the minced garlic and cook for 1-2 minutes, stirring often. Add the tomato paste and minced thyme to the onion mixture, and cook for an additional 1-2 minutes stirring often. Finally, add the bourbon, maple syrup and mustard to pot. Reduce heat to medium low and simmer until slightly thickened.

Pat salmon fillets dry with a paper towel and season with salt (in moderation) and pepper. Add to the hot skillet and cook for 2-3 minutes or until golden brown. Flip, and cook for an additional 1-2 minutes.

Reduce heat to medium and pour the maple-bourbon glaze directly on top of the salmon fillets. Continue to cook while basting the salmon in the glaze until fish flakes easily with a fork.
