Pineapple Jerk Chicken Sandwiches

Ingredients

> 1 (4- 5 lb) whole chicken
> 4 tbsp jerk seasoning
> 2 cups shredded cabbage
> 1/2 cup mayonnaise
> 2 limes, juiced
> 1 (20 oz) can pineapple slices, drained and patted dry
> 1 (11 oz) Nature's Promise® French Style Baguette

Preheat the oven to 400°F. Place the chicken in a roasting pan and rub it entirely with jerk seasoning. Roast chicken about 1 hour or until thermometer inserted into thickest part of thigh reaches 165°F.

While the chicken roasts, mix the shredded cabbage with the mayo and fresh lime juice. Season slaw with salt and pepper to taste.

During the last 15 minutes of roasting time, add the pineapple slices to the roasting pan. Once the chicken is fully cooked, remove from the oven and set aside to rest. Take the pineapple out of the roasting pan and shred the chicken. Remove all bones and mix the chicken well with seasoning and any roasting juices.

Slice the baguette open lengthwise and add the roasted pineapple to the bottom half, followed by the shredded jerk chicken, then the creamy lime coleslaw. Finish with the top half of the baguette, cut into thirds or quarters and enjoy!
