Ingredients

> 1/4 cup fresh cilantro, finely chopped
> 1/4 cup fresh mint, finely chopped
> 1 medium shallot, minced
> 2 tbsp extra virgin olive oil
> 2 tbsp lemon juice
> 1 1/2 tbsp red wine vinegar
> 1 tsp Dijon mustard
> 1 clove garlic, minced
> 1/2 tsp salt
> 12 oz rotini pasta, cooked and drained
> 3/4 cup canned chickpeas, drained and rinsed
> 1/2 medium red bell pepper, cut into bite-size strips
> 1/2 medium yellow bell pepper, cut into bite-size strips
> 1/2 large avocado, diced
> 2 stalks celery, thinly sliced
> 1 cup arugula
> 1/2 cup PLANTERS ® Cashews
