Poached Chicken Breast with Broccolini and Sesame Vinaigrette

A simple, flavorful meal that is perfect for days when you want something light.

> 2 tbsp sesame seeds
> 2 bunches broccolini
> 2 cloves garlic, peeled
> 1 inch fresh ginger, peeled
> 1 tsp hot sauce
> 1/2 tsp salt
> 1 lb Nature's Promise chicken breast tenders
> 1 1/2 tbsp low - sodium soy sauce
> 1 tsp rice vinegar
> 2 tsp sesame oil
> mango chutney, to serve (optional)


Toast the sesame seeds for 3 min. in a pan without oil or butter, until golden brown. Transfer to a plate and cool.
Bring 4 cups of water to a boil. Add the broccolini, cover and cook for 3 min. Use tongs to remove the broccolini to a serving platter and set it aside, covered. Add the garlic cloves, piece of ginger, hot sauce and salt to the pan of water. Simmer for 5 min. to allow the flavors to develop.
Add the chicken to the broth and simmer 10 min., or until cooked through. Make sure the broth does not boil—it should be barely simmering.
While the chicken poaches, whisk together the soy sauce, rice vinegar and sesame oil. Drizzle the broccolini with the dressing and sprinkle with the toasted sesame seeds. Top with poached chicken, a little of the broth and mango chutney, if desired.
