> 1 1/2 cups medium-ground polenta/cornmeal

In a heavy-duty medium pot, heat 7 cups salted water to a boil on high.

Once boiling, stir in polenta. Reduce heat to low and simmer 25–35 min., until polenta is thick, stirring frequently.
