Pork Mole

A great mole dish without the complication of a great mole dish. Simply brown the pork tenderloin in the same skillet as the tomatoes, garlic and onions. Simmer the meat in the sauce with the spicy ingredients—chili, chipotle, cinnamon, and cocoa—and your family will ask you for a Mexican themed dinner every week.

Ingredients

> 1 1/4 lb pork tenderloin, cut into bite-size pieces
> 1 tsp crushed garlic
> 1/2 cup chopped onion
> 1 can ( 14.5 oz ) diced tomatoes (no salt added)
> 1 tsp chili powder
> 1/8 tsp chipotle chili powder
> 1/2 tsp ground cumin
> 1/2 tsp dried oregano
> 1/2 tsp ground cinnamon
> 1 tbsp unsweetened cocoa powder
> 2 tbsp brown sugar, lightly packed

Steps

Spray a large skillet with cooking spray and heat over medium-high heat. Add pork and cook 5 minutes until no longer pink, stirring occasionally. Add garlic and onion and cook for about 2 minutes until tender and lightly browned. Add remaining ingredients, bring mixture to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally.
