Instant Pot® Sour Cream and Chive Mashed Potatoes

No need to chop the potatoes or wait for a large pot of water to boil—pressure cooking will save on prep and cook time. This twist on the classic side was inspired by sour cream and onion potato chips.

Ingredients

> 3 lbs Yukon Gold potatoes
> 2 cups water
> 4 tbsp (1/2 stick) salted butter, sliced
> 1/2 cup whole milk
> 1/2 cup light sour cream
> 2 tsp onion powder
> 1 cup kettle cooked sour cream and onion potato chips (optional)
> 2 tbsp chopped chives, to garnish

Peel and halve the potatoes. Place the steamer rack in the Instant Pot® and add the water. Add potatoes to steamer rack. Seal lid and set to high pressure. Cook 12 min., then quick release. Set the Instant Pot® to keep warm.

Carefully remove steamer rack and potatoes. Drain potatoes and return to Instant Pot®. Stir in the butter, milk, sour cream, and onion powder. Season with salt and pepper. With a potato masher, mash until combined and smooth. Transfer to a large serving bowl or leave in Instant Pot® on “keep warm” setting for up to 1 hour. To serve, top with the chips, if desired, and the chives.

Tips

To help the Instant Pot® come up to pressure faster, add boiling water instead of room-temperature water with the potatoes.
