Pork Tacos with Chipotle Sour Cream

The mighty chipotle lends smokiness to creamy sour cream for a tastier taco topping. Serve with a side of refried beans or tomato and avocado salad.

Ingredients

> 1 large onion
> 2 tbsp canola oil
> 1 tbsp butter
> 1 can chipotle chile in adobo 
> 1/4 cup low-fat sour cream
> 3 tbsp Nature's Promise® Organic Caesar Dressing with Greek Yogurt
> 1 heart romaine lettuce 
> 3 plum tomatoes
> 1 (1 1/4 lb) pork tenderloin
> 12 (6-inch) small fajita flour tortillas
> Hot sauce (optional)

Peel, halve, and thinly slice the onion. In a small skillet, heat 1 tbsp oil on medium-high. Add onions, salt, and pepper, and cook 6–8 min., until onions begin to soften. Add butter and reduce heat to medium-low. Cook onions 25–35 min., until very tender and caramelized, stirring occasionally.

Finely chop chipotle and place in a small bowl. Stir in sour cream and Caesar dressing. Thinly slice lettuce and finely chop tomatoes.

Meanwhile, slice pork tenderloin into 2-inch-long pieces and season with salt and pepper. In a large nonstick skillet, heat remaining 1 tbsp oil on medium-high. Add pork and cook 6–8 min. until done. Transfer to a bowl and cover with foil to keep warm until onions are finished.

Wrap tortillas in 2 damp paper towels. Microwave 1–2 min., until hot. Serve filled with pork, lettuce, tomatoes, chipotle sour cream, and hot sauce.
