Buffalo Ranch Chicken Salad Stuffed Cucumber Boats

Ingredients

> 1 rotisserie chicken
> 2 stalks celery
> 1/2 cup plain Greek yogurt
> 1 tbsp ranch dressing seasoning mix
> 2 tbsp Buffalo wing sauce
> 6 small cucumbers
> 1/4 cup crispy fried onions

Steps

Pull the meat off the chicken and shred, discarding all the skin, bones, and cartilage. Place in a large bowl. Finely chop the celery and add to the chicken with the yogurt, ranch seasoning, and buffalo sauce. Mix well.

Wash and peel the cucumbers. Cut in half lengthwise. Scoop out the seeds with a small spoon. Stuff with the chicken salad, and sprinkle with a small amount of fried onions. Serve and enjoy!
