Ingredients

> 1 lb 90% lean ground beef
> 1/2 tsp ground cumin
> 1 tbsp chopped cilantro
> 1 tsp chili powder (optional)
> 1 red bell pepper
> 2 jalapeno peppers
> 4 hamburger buns
> 1/2 cup jarred queso

To Serve:

> Sliced red onion
> Sliced tomato
> Lettuce leaves

Steps

1
Set grill or grill pan to medium-high. To a medium bowl, add the ground beef, cumin, cilantro, and chili powder (if using). Season with salt and pepper. Form mixture into 4 patties.
2
Cut the bell pepper and jalapeños in half lengthwise. Discard stems and seeds. Add pepper and jalapeños to grill and cook 4–5 min. per side, until tender. Add burgers to grill and cook 3–4 min., per side, until desired doneness. Transfer burgers and peppers to a plate to rest. Add the hamburger buns to grill and toast 1–2 min., until lightly browned.
3
Transfer the queso to a small microwave-safe bowl. Microwave 30 sec.–1 min., stirring as needed, until warm. When cool enough to handle, slice grilled peppers into long strips. Place patties on buns, and top with queso, grilled peppers, and grilled jalapenos. Top with sliced red onion, tomato, and lettuce, as desired. Serve immediately.
