Quick Tomato Relish

When tomatoes are at their peak, it’s nice to preserve some for the cooler days ahead. This zesty relish is very good with cheese, sausages, steak, chicken or fish.

> 1 lb tomatoes
> 1 (1 inch) piece fresh ginger
> 2 cloves garlic
> 1 tbsp olive oil
> 1 cup chopped red onion
> 1/2 tsp crushed red pepper flakes
> 2 tbsp white wine vinegar
> 2 tbsp raw sugar


Roughly chop the tomatoes. Peel and grate the ginger. Mince the garlic. In a medium saucepan, heat the oil on medium. Add the chopped onions, grated ginger, minced garlic, and crushed red pepper and cook 5 min., stirring often.
Add tomatoes and cook 5 min. Stir in vinegar and sugar and simmer 10 min., stirring frequently, until tomatoes break down and mixture thickens. Season with salt and pepper.
Pour the relish into a 1 pint preserving jar and let cool. Store in the refrigerator.
