Ingredients

1 lb tomatoes

1 (1 inch) piece fresh ginger

2 cloves garlic

1 tbsp olive oil

1 cup chopped red onion

1/2 tsp crushed red pepper flakes

2 tbsp white wine vinegar

2 tbsp raw sugar

Roughly chop the tomatoes. Peel and grate the ginger. Mince the garlic. In a medium saucepan, heat the oil on medium. Add the chopped onions, grated ginger, minced garlic, and crushed red pepper and cook 5 min., stirring often.

Add tomatoes and cook 5 min. Stir in vinegar and sugar and simmer 10 min., stirring frequently, until tomatoes break down and mixture thickens. Season with salt and pepper.

Pour the relish into a 1 pint preserving jar and let cool. Store in the refrigerator.
