Quinoa with Grapefruit, Pear and Goat Cheese

Sweet and spicy, this is the perfect pick-me-up for a dreary winter’s day. Bright grapefruit and creamy goat cheese pair well with protein-rich quinoa.

Ingredients

> 1 1/2 cups quinoa
> 1 pear
> 1 grapefruit
> 1/2 cup fresh mint
> 1 (4 oz) log goat cheese
> 2 tbsp mayonnaise
> 1 cup arugula

Cook the quinoa according to package directions.

While quinoa cooks, cut the pear into quarters, remove the core and dice. Peel and segment the grapefruit, removing any white pith, and chop coarsely. Roughly chop the mint. Cut the goat cheese into thin slices.

When quinoa is ready, transfer to a large bowl and mix with the mayonnaise. Add pear, half the grapefruit, mint and arugula and toss. Season salad to taste with salt (in moderation) and pepper.

Top salad with goat cheese slices and the remaining grapefruit.
