> 1 (15.25 oz) box red velvet cake mix
> 1 cup water
> 1/2 cup vegetable oil
> 3 large eggs
> 1/4 cup unsweetened cocoa powder
> 1 (8 oz) pkg cream cheese, softened
> 1/4 cup (1/2 stick) butter, softened
> 1 cup confectioners' sugar
> 1/2 tsp vanilla extract
> pinch salt


Preheat oven to 350°F. Line 2 baking sheets with parchment paper. In a large bowl with standing or hand mixer, beat cake mix, water, vegetable oil, eggs, and cocoa powder just until smooth.
By heaping tablespoons, dollop the batter onto the lined baking sheets, spacing 2–3 inches apart. Bake 10 min., until edges are set and tops are just dry to the touch. Cool completely on a wire rack.
Meanwhile, beat cream cheese until smooth. Beat in butter until creamy, then add sugar, vanilla, and salt. Continue mixing until smooth. Spread cream cheese frosting on flat sides of half of cookies. Sandwich with remaining cookies.
