Ingredients

1 (8.8 oz) pkg 90-second brown rice

1 bunch broccolini

1 lime
>
1/2 tsp crushed red pepper flakes

2 tbsp soy sauce
>
2 tsp sesame oil
>
1/2 bunch fresh cilantro
>
1 firm but ripe avocado
>
2 (5 oz) cans tuna packed in water drained
>
2 tbsp toasted sesame seeds

Cook the rice according to package directions, transfer to large bowl and set aside. Trim broccolini and cut into 2-inch pieces. Cook in a large pot of boiling water until tender, about 5 min.

Zest the lime, halve and juice. In a bowl, whisk together the lime zest and juice, red pepper flakes, soy sauce and sesame oil to make a dressing.

Roughly chop the cilantro. Cut the avocado in half lengthways, remove the pit and scoop out the flesh with a spoon. Cut into ½-inch cubes.

Toss the dressing, broccolini, cilantro, avocado and tuna with the rice. Garnish with sesame seeds.
Tips
To toast sesame seeds, spread on a plate and microwave for 1 min. Stir and microwave 30 seconds longer. Stir and microwave another 30 seconds if necessary.
