Roast Chicken Wrap with Mango, Herbs and Lime Mayonnaise

This wrap has a distinctly tropical feel and would make a lovely light lunch or supper. This is a great use for leftover chicken.

Ingredients

> 1 gluten-free wrap
> 2 tsp mayonnaise
> 1/2 tsp lime zest
> 1/2 cup shredded chicken breast
> 1/4 cup diced mango
> 1 large radish, sliced
> 1/4 cup fresh cilantro leaves
> 1/4 cup fresh basil leaves
> 1 tbsp fresh mint leaves

Steps

Spread wrap with mayonnaise. Sprinkle with lime zest, salt and pepper.

Top with shredded chicken, diced mango, sliced radish, and herbs.

Roll wrap, slice in half, and serve.

Tips

Add a squeeze of lime juice before rolling up the wrap.
