Preheat oven to 400°F. Peel and trim carrots. Slice on a diagonal into 2-inch pieces.

Toss carrots in olive oil to coat and season with salt and pepper. Arrange on a baking sheet and roast for 25 min., tossing halfway. Remove from oven and serve.
