Ingredients

1 large onion

1 head cauliflower

1/2 cup matzo meal

3 tbsp chopped dill

3 tbsp chopped flat-leaf parsley

3 tbsp olive oil

1/2 tsp salt

1/2 tsp pepper

1 tbsp honey

4 large eggs, beaten

Preheat oven to 450°F. Roughly chop onion. Remove core from cauliflower and separate into florets. In a large bowl, mix together matzo meal, dill and parsley. Set aside.

On a large baking sheet, toss onion and cauliflower with olive oil, salt and pepper. Bake for 25 min. Carefully remove baking sheet and drizzle vegetables with honey. Roast until golden brown, about 5-10 min. Remove vegetables and lower heat to 375°F.

Pulse cauliflower and onion in a food processor until finely chopped. Add cauliflower mixture and beaten eggs to matzo meal and herbs. Mix until well combined.

Pour into a well-greased 9x9-inch baking pan and bake until golden brown and set, about 35 min. Cut into 8 squares and serve.
