Roasted Chicken with Lemon, Olives, and Tomato

Ingredients

> 1 (5- 7 lb) pkg whole cut up chicken
> 1 1/2 tsp paprika
> 1 tsp garlic powder
> 1/2 tsp cinnamon
> 2 tsp kosher salt
> 2 lemons
> 1 cup green olives
> 1 (15 oz) can diced tomatoes

Steps

Preheat oven to 400F. Mix together paprika, garlic powder, cinnamon, and salt. Sprinkle over chicken pieces on both sides.

Pour can of tomatoes into the bottom of a large 5 qt casserole dish. Place seasoned chicken on top. Thinly slice lemons and place around chicken. Pour olives into the spaces between chicken pieces.

Cook for 45 minutes, or until a meat thermometer reads 165F in the thickest parts of a breast and thigh.

Let stand for 5-10 minutes before serving.
