Roasted Green Beans

All an everyday vegetable needs to become exciting again is a new way of preparing it. Rather than steaming, try this recipe for roasted green beans. They stay crisp-tender, but darken slightly, and benefit from the crunch of toasted shallots and pecans. Perfect as a side dish or a vegetarian starter.

Ingredients

> 1 lb fresh green beans
> 1 tbsp olive oil
> 1/4 cup pecan pieces
> 2 tbsp chopped shallots
> 1/2 tsp dried oregano leaves
> 1/2 tsp freshly ground black pepper

Preheat the oven to 400°F. Trim the ends of the green beans and place on baking sheet. Toss beans with olive oil and spread out evenly on baking sheet. Roast for 8 minutes, then add pecans and shallots and continue roasting another 5 minutes or until beans are lightly browned and crisp tender. Remove from oven, sprinkle with oregano and black pepper before serving.
