Green Bean Salad Almondine

Toasted sliced almonds add crunch to this easy green bean salad. This makes a nice choice for a holiday potluck, or a side to your favorite pork or chicken dish. Serve chilled or at room temperature for best results.

Ingredients

> 4 cups fresh green beans ( 1 1/4 lb )
> 1 stalk celery, thinly sliced
> 1/4 medium red onion, thinly sliced
> 2 tbsp red wine vinegar
> 1 tbsp fresh lemon juice
> 1 tsp lemon zest
> 1/4 tsp kosher salt
> ground black pepper to taste
> 1/4 cup sliced almonds

Bring a large pot of water to a boil. Trim and tail green beans and add to water. Boil beans until they are only slightly tender (4-5 minutes). Plunge in ice water bath, drain and pat dry. Transfer beans to a large bowl and combine with celery and onion. In a small bowl, mix vinegar, lemon juice, lemon zest, salt and pepper. Add vinegar mixture to beans and toss to combine.

Toast almonds in a non-stick pan over medium heat, stirring frequently to prevent scorching. Sprinkle almonds over bean mixture and chill until ready to serve.
