Roasted Potatoes

Simple roasted potatoes are a great addition to any dinner or meal prep menu and great alongside a variety of proteins like chicken, steak, and fish.

> 2 tbsp canola oil, divided
> 1 (24 oz) bag Nature's Promise® Organic Baby Gold Potatoes, scrubbed


Preheat oven to 400°F. Coat a large rimmed baking sheet with 1 tbsp canola oil. Place in oven 10 min.
Meanwhile, halve the potatoes and toss with remaining 1 tbsp oil. Season with salt and pepper. Carefully remove preheated baking sheet from oven. Add potatoes, cut-sides down.
Roast 20–25 min., until golden brown. Flip potatoes and roast 10–15 min., until tender.


Flavor combinations:

Dill and Dijon: Whisk together 1 tbsp each olive oil, Dijon mustard, and white wine vinegar. Toss roasted potatoes with vinaigrette and ¼ cup chopped fresh dill.

Old Bay and Lemon: Toss roasted potatoes with 1 tbsp Old Bay seasoning and a squeeze of fresh lemon juice.

Rosemary and Parm: Toss potatoes with 1 tbsp chopped fresh rosemary before roasting. After roasting, toss with ½ cup grated Parmesan.
