Ingredients

> 2 lbs baby potatoes
> 2 tbsp olive oil
> 1 tbsp Italian seasoning

Steps

Preheat oven to 425°F. Halve each potato and add to a large rimmed baking sheet.

Onto baking sheet, toss potatoes with oil, Italian seasoning, salt, and pepper.

Roast 30–35 min., until tender, stirring once halfway through.
