Shrimp, Broccoli, and Soba Noodles in Spicy Sauce

This dinner is packed with spicy flavor, gets to the dinner table super fast, and yields enough for plenty of leftovers. Could it get any better?

Ingredients

> 1 (12 - 14 oz) pkg soba noodles
> 1 (16 oz) pkg broccoli florets
> 1 lb medium shrimp, peeled and deveined
> 2 tbsp basil
> 1/2 cup sweet Thai chili sauce
> 1 tbsp sambal oelek

Steps

Cook soba noodles in boiling water for 2 min. Add broccoli to the pot, continue to cook for 1 min.

Add shrimp to the pot. Gently boil for an additional 1 min. or until shrimp are bright pink and fully cooked. While shrimp cook, coarsely chop the basil.

Drain pot into a colander. Return the noodles, shrimp, and broccoli to the pot. Add the sweet Thai chili sauce and sambal oelek. Toss to combine. Garnish basil and serve.
