Shrimp Ceviche Tostada

Ingredients

> 1 lb raw shrimp, peeled and diced with tails removed
> 3/4 cup lime juice
> 1/4 cup red onion, diced
> 1/2 cup cucumber, peeled and diced
> 1 jalapeno, seeded and diced
> 2 Roma tomatoes, diced
> 2 tbsp cilantro, chopped
> 2 tbsp mayonnaise
> 1 large avocado, sliced
> 8 tostada shells
> Salt, to taste

Steps

Add shrimp and lime juice to a large bowl (shrimp should be submerged completely), and let sit for 15 minutes or until shrimp is pinkish white.

When shrimp is done, drain and discard lime juice.

Mix shrimp with onion, cucumber, jalapeno, tomato, cilantro, and mayo, and distribute evenly among tostada shells.

Top with sliced avocado, and enjoy!
