1 1/4 cups quick-cooking grits

1 1/2 cups grated white cheddar cheese

2 green onions
>
1 lb Nature's Promise ® large easy peel shrimp
>
1 tbsp Cajun seasoning blend
>
1 tbsp Nature's Promise ® extra virgin olive oil

In a medium saucepot, heat 5 cups water to a boil on high. Once boiling, season with salt and stir in the grits. Reduce heat to medium-low. Cook 5–7 min., until thickened, stirring occasionally. Stir in the cheese until melted and remove from heat.

Meanwhile, chop the green onions. In a medium bowl, toss the shrimp with the Cajun seasoning, salt, and pepper.

In a large nonstick skillet, heat the oil on medium-high. Add shrimp and cook 2–3 min., until cooked. Serve shrimp over grits and garnish with green onions.
