Ingredients

1 onion, diced

2 cloves garlic, minced

1 tbsp olive oil

2 bay leaves

1 tsp dried basil, oregano, or thyme

1 lb dried beans, rinsed and picked over

Sauté onion and garlic in olive oil until soft, about 5 min. Place in a slow cooker along with bay leaves and herbs. Add beans. Cover with hot water by at least 1 inch.

Cook on high for 6 hours. Chill beans, covered, in cooking liquid until ready to use.
