Slow Cooker Garlic Chicken

This easy 5-ingredient dinner combines the best of garlic confit and slow-cooked chicken. Try serving it with a baguette, mashed potatoes, buttered noodles, or rice.

> 1 (1.5 lb) pkg bone-in, skin-on chicken thighs
> 30- 40 Nature's Promise® Peeled Garlic Cloves or 4 garlic bulbs, peeled
> 1 (0.5 oz) pkg Nature's Promise® Organic Thyme
> 1/2 tsp crushed red pepper (optional)
> 1 cup olive oil or canola oil


Pat the chicken dry and trim any excess skin or fat. Season chicken with salt and pepper and place in a 6- to 7-qt slow cooker. Add the garlic, thyme, and crushed red pepper, if using. Pour in the oil. Cook on high 2½–3 hours, until chicken has reached an internal temperature of 165°F and garlic is tender.
Using a slotted spoon, remove cooked chicken and garlic from oil. Strain and reserve the oil, separating out any chicken juices from bottom. If desired, in a 12-inch nonstick skillet, heat 2 tbsp reserved oil on medium-high. Add chicken, skin-side down, and cook 3–5 min., until skin is crisp. Serve with garlic.


Use the oil to cook vegetables, spread on toast, or to make a dressing. Fold the garlic cloves into mashed potatoes or pasta.
