Ingredients
>
2 limes
>
4 tsp honey
>
2 tbsp olive oil
>
1 pineapple, cored and cut into 3/4" rings
>
1/2 cup dark rum
>
1/4 cup brown sugar
>
1/2 tsp salt
>
Vanilla ice cream, to serve
Steps
1
Set grill to low or smoker to 250°F. Into a small bowl, zest 2 teaspoons and juice 2 tablespoons from limes. Mix in honey and oil until combined. Brush mixture all over pineapple rings.
2
Place pineapple on grill or in smoker and cook until lightly charred and tender, flipping occasionally, about 35 to 45 minutes.
3
Meanwhile, in a small saucepan, combine rum, sugar and salt. Bring mixture to a boil, then reduce to a simmer. Cook until sauce is thick enough to coat back of a spoon, stirring occasionally, about 5 to 7 minutes.
4
Remove smoked pineapple from grill. Serve with a scoop of ice cream and drizzle rum sauce over top of sundaes.
Tips
To enhance smoke flavor using grill: Soak smoking wood chips in water for at least 30 minutes. This prevents them from burning too quickly and produces more smoke. Place soaked wood chips in a foil packet and poke holes in it or place wood chips in a smoke box designated for gas grills. Put the packet directly on the charcoal of a grill or directly on heat source of a gas grill (without a smoke box).
