Ingredients

1 (12 oz) pkg spaghetti

1 pint cherry tomatoes

4 mild Italian sausages

1 cup chopped onion

10 oz chopped kale

1/2 cup light cream
>
1 cup chicken broth

1/2 cup grated Parmesan cheese

Cook the pasta according to package directions until al dente, then drain. Halve the cherry tomatoes and mix with pasta.

While the pasta cooks, remove sausages from their casings. Heat a dry skillet over medium-high heat and add the sausages, breaking them up with a wooden spoon. Add the onion and sauté for 5 min. Add the kale, in batches, and cook for about 5 min., or until kale is wilted.

Reduce the heat to medium-low and add the cream and chicken broth. Bring to a simmer and cook for about 4 min., or until sauce reduces. Mix the pasta and tomatoes into the sauce. Serve with grated Parmesan cheese.
