Speedy Lemon-Herb Chicken and Rice

Marinated, individually wrapped chicken breasts and instant rice mean this family-friendly meal comes together with a minimum of effort (and dishes). Substitute fresh baby spinach for the Swiss chard, if you like.

> 4 Nature's Promise®  Garlic Herb Marinated Chicken Breasts 
> 1 (15.9 oz) pkg Nature's Promise® Long Grain Instant White Rice
> 1 bunch Swiss chard
> 1 lemon
> 1 tbsp Nature's Promise® Organic Extra Virgin Olive Oil
> Nature's Promise® Mediterranean Style Sea Salt g=Grinder
> Nature's Promise® Organic Whole Black Peppercorn Grinder
> 4 lemon slices (optional)


Preheat oven to 375°F. Place chicken breasts on a foil-lined baking sheet and cook for 15 min., or until an instant read thermometer inserted in the thickest part of the breast reaches 165°F.
Meanwhile, tear rice package open approximately 1 inch and place standing up in microwave. Heat on high for 90 sec. Strip the leaves from the Swiss chard (discard the stems) and roughly chop. Zest and juice the lemon.
Transfer the hot rice to a large bowl and combine with the chopped Swiss chard, 2 tbsp lemon juice, 1 tsp lemon zest, and 1 tbsp olive oil. Mix well (chard will wilt slightly). Season with sea salt and peppercorn grinder. Divide rice mixture among 4 plates and top each with a chicken breast. Garnish with lemon slices, if desired.
