Spiced Apple Compote

Ingredients

> 1 1/2 cups water
> 1/4 cup sugar
> 1 whole cinnamon stick
> 3 whole cloves
> Peel from 1/2 lemon
> Juice from 1/2 lemon (3 tablespoons)
> 4 cups sliced firm apples
> 1/4 cup seedless raisins

Steps

In a medium saucepan, combine water, sugar, cinnamon stick, cloves, lemon peel (no white part) and lemon juice.

Bring liquid to a boil, then reduce to a simmer.

Meanwhile, peel, core and slice the apples; add to the liquid.

Simmer uncovered for about 5 to 8 minutes, until apples are tender but not mushy.

Remove from heat, remove lemon peel and add raisins.

Allow mixture to cool slightly, transfer to a bowl, cover and refrigerate.

Remove cinnamon and cloves before serving.
