Spring Green Salad with French Beans and Radishes

Featuring crunchy radishes and a homemade lemon vinaigrette, this healthy make-ahead salad is the perfect side dish or appetizer for any spring feast.

> 1 (12 oz) pkg steam in bag green beans
> 1 large shallot
> 3 tbsp lemon juice
> 2 tbsp Dijon mustard
> 1 tsp honey
> 6 tbsp olive oil
> 4 - 5 medium radishes
> 1 (5 oz) pkg Nature's Promise® Organic Spring Mix
> 4 oz chunk Parmesan


Cook the green beans according to package directions. Let cool, then cut into halves on an angle.
Finely chop the shallot. In a small bowl, whisk the lemon juice, mustard, honey, and 1 tbsp water. Slowly whisk in the oil. Stir in the shallot. Season with salt and pepper to taste.
Trim and thinly slice the radishes. When ready to serve, on a large serving platter, arrange the spring mix and top with green beans and radishes. Drizzle vinaigrette on top. Shave or grate the Parmesan on top and serve immediately.


Make the vinaigrette, cook the green beans, and cut the radishes 1 day ahead. Assemble just before serving.
