Stone Fruit Crisp

No one will believe this fruit crisp is thrown together with 5 ingredients and done in less than 1 hour. This easy dessert can be made with any stone fruit: peaches, plums, nectarines—or even a combination of all three.

Ingredients

> 3 lbs peaches
> 1/4 cup sugar
> 2 tbsp cornstarch
> 2 1/4 cups honey & oat granola, divided
> 6 tbsp unsalted butter, cubed

Preheat oven to 350°F. Pit and slice the fruit into thin wedges (about 8 cups). In a medium bowl, toss together sliced fruit, sugar, cornstarch, and a pinch of salt. Transfer mixture to a greased 9x9-inch baking dish.

Meanwhile, in the bowl of a food processor, pulse 1 cup granola until coarse crumbs form. Transfer granola crumbs to a medium bowl, then add remaining 1¼ cups granola and the butter. With clean hands, work butter thoroughly into granola mixture, until pea-size crumbs form. Crumble granola mixture over fruit. Cover with foil and bake 45–50 min., until fruit is soft and bubbling.

Tips

Serve with vanilla ice cream or whipped cream, if desired.
