Stuffed Pepper Skillet

Ingredients

> 2 tbsp olive oil
> 1 lb 93% lean ground turkey
> 1 medium yellow onion, thinly sliced
> 2 tbsp tomato paste
> 2 (12 oz) bags frozen mixed pepper strips, thawed
> 1 cup uncooked white rice
> 1 1/2 cups water
> 1 (14.5 oz) can fire-roasted diced tomatoes
> 1 (8 oz) pkg Monterey Jack cheese, shredded
> Chopped parsley, to garnish (optional)

In a 12-inch oven-safe skillet, heat the oil on medium-high. Add the turkey and onion and sauté 6–8 min., until turkey is cooked through, breaking up meat with a spatula. Season with salt and pepper.

To skillet, add the tomato paste and cook 1–2 min., stirring constantly. Stir in the mixed peppers, raw rice, water, and tomatoes. Season with salt and pepper. Bring to a boil. Cover, reduce heat to low, and cook about 20 min., until rice is tender, stirring occasionally to prevent rice from sticking.

Preheat broiler to high. To skillet, stir in half the cheese, then top with remaining cheese. Broil 2–3 min., until cheese is melted. Garnish with the parsley, if desired.
