4 russet potatoes

2 sweet potatoes

1 large onion

1/4 cup chopped fresh cilantro

To make the patties, peel the potatoes and grate them along with the onion in a food processor, using the fine grating disc.

Beat the eggs in a large bowl and add the cilantro, curry powder, and garlic. Mix in the grated vegetables, flour and a pinch of salt.

Heat 2 tbsp oil in a large skillet. Spoon 4 mounds of batter into pan and press flat. Fry for 6 min. turning once midway. Drain the patties on paper towels. Repeat until you have 16 patties.
Tips
For a quick, spicy dip combine 1 cup Sriracha with lime juice to taste. Mix in 1/2 cup finely chopped fresh pineapple.
