Ingredients

> 1 (32 oz) pkg low-sodium beef broth
> 3 cups water
> 1 lb Shady Brook Farms ® Ground Turkey
> 1 medium onion, chopped
> 1 red bell pepper, seeded and chopped
> 1 (15.5 oz) can light red kidney beans, drained and rinsed
> 3 cloves garlic, minced
> 1 (8 oz) can tomato sauce
> 1/2 (1 oz) packet low-sodium taco seasoning
> 2 tsp chili powder

To Garnish (Optional):

> Tortilla chips
> Sour cream
> Shredded Cheddar cheese
> Chopped cilantro

In large heavy-bottom pot or Dutch oven, bring the broth and water to a boil. Add the ground turkey, breaking up with wooden spoon.

To pot, add the onion, bell pepper, beans, garlic, tomato sauce, taco seasoning, and chili powder. Season with salt and pepper. Reduce heat to medium-low and partially cover. Simmer 1–1½ hours, until liquid is reduced by half and taco soup is at a desirable consistency, stirring occasionally.

Ladle soup into bowls and garnish with the green onions, tortilla chips, sour cream, cheese, and cilantro, if desired.
