1 cup (2 sticks) butter, softened

1 cup brown sugar

2 large eggs, separated

2 1/2 cups flour

1/2 teaspoon salt

2 cups chopped walnuts or sliced almonds

1 cup jam, whisked lightly

Preheat oven to 325°F. In a standing mixer, beat butter and sugar until light and fluffy. Add egg yolks and beat well. Mix in flour and salt.

In a pie plate or other shallow dish, lightly whisk the egg whites. Place chopped nuts on a plate. Roll tbsp of cookie dough into balls, dip into egg white then chopped walnuts. Place on parchment lined baking sheet. Use thumb or forefinger to create indent, fill with a dab of jam. Bake until golden on bottom, about 12 min. Cool completely.
