Tomato Sauce with Bacon

Smoky bacon brings a savory meatiness to this take on Roman-style amatriciana tomato sauce with the added kick of red pepper flakes.

Ingredients

> 4 oz thick cut bacon
> 1 tbsp olive oil
> 1 cup diced onions
> 1 tbsp minced garlic
> 1/4 tsp crushed red pepper
> 2 (28 oz) cans diced tomatoes

Slice the bacon. In a large pot, heat the oil on medium. Add bacon and cook 8 min., until fat renders, stirring often. Transfer bacon to plate.

Discard all but 1 tbsp fat from pot. Add the onions, garlic, crushed red pepper, salt, and pepper and cook on medium-high 6 min., until onions have softened.

Into pot, stir in the tomatoes. Season with salt and pepper. Heat to a boil, then reduce heat to simmer. Cook 25 min. Stir in reserved bacon.
