Triple Berry Clafoutis

Think of this simple French dessert as a fluffy, skillet-sized pancake. This berry-studded version would be delicious with a dollop of yogurt, ice cream or whipped cream.

Ingredients

> 1 tbsp unsalted butter
> 1 cup whole milk
> 2/3 cup sugar
> 3 large eggs
> 1/2 tbsp vanilla extract
> 1/4 tsp salt
> 1/2 cup all-purpose flour
> 1/2 cup fresh blackberries
> 1/2 cup fresh raspberries
> 1/2 cup quartered fresh strawberries
> Confectioners' sugar, to serve

Preheat oven to 350°F. Rub a 10” cast-iron skillet with butter and place in oven to preheat.

To a blender or food processor, add milk, sugar, eggs, vanilla, salt and flour. Blend on high 1 minute, until smooth.

Using oven mitts, carefully remove hot pan from oven and pour in batter. Scatter blackberries, raspberries and strawberries evenly over batter. Bake 40 to 45 minutes, until top of clafoutis is puffed and golden, and a toothpick inserted into center comes out clean. Let clafoutis cool in skillet. Dust with confectioners’ sugar to serve.
