Ingredients

2 (1 lb) blocks firm tofu

2 1/2 tbsp garam masala

2 tsp ground ginger
>
1 tsp chili powder
>
1 tsp ground black pepper
>
2 tsp curry powder
>
1/2 red onion, diced
>
2 tsp salt
>
2 (14 oz) cans coconut milk
>
12 oz tomato paste
>
Juice of 2 limes
Steps

Press tofu for 30 minutes, and cut into large cubes.

Add all ingredients except tofu and lime juice to a lined crockpot, and mix until well combined.

Add tofu, and stir until incorporated.

Set crockpot to “low,” and cook for 6-7 hours.
Note: If cooking on “high,” cook for 3-4 hours.

When finished, turn off the heat, and stir in the lime juice.
