Veggie Burger with Hummus, Spinach and Scallions

This veggie burger combo is light and tasty! Don't like hummus? Tzatziki is an easy alternative.

Ingredients

> 8 slices sourdough bread (1/2-inch thick)
> 6 tbsp olive oil
> 1 clove garlic, halved
> 4 frozen vegetable burgers, thawed
> 6 tbsp spinach and artichoke hummus
> 1 cup baby spinach leaves
> 3 green onions, thinly sliced

Preheat the oven to 400ºF. Brush the bread on both sides with olive oil. Toast for 8 minutes on a rack in the oven, or until golden brown. Rub the garlic cloves over the bread.

Heat a large frying pan over medium-high heat or fire up the grill. Brush the burgers with the remaining oil and grill for 5 minutes, turning once.

Top 4 slices of the grilled bread with 1 ½ tablespoons hummus and a few spinach leaves. Place one veggie patty on the bread, sprinkling with sliced spring onions. Top with the second slice of bread.
