Veggie Burgers with Sweet Potato Fries and Salad

Using frozen veggie burgers makes this wholesome take on burgers and fries quick and easy.

Ingredients

> 1 (19 oz) pkg frozen sweet potato fries
> 2 oranges
> 1 fennel bulb
> 3 tbsp olive oil
> 1 clove garlic
> 4 cups fresh spinach
> 4 Nature's Promise soy-based vegetable burgers
> 1 bunch fresh basil

Cook the sweet potato fries according to package directions. Meanwhile, use a sharp knife to slice off the bottom and top of the oranges. Set the fruit on its flat edge and use the knife to peel the skin and pith away from the orange. Working over a bowl, carefully insert the blade of the knife between the flesh and the membrane of each section to create clean wedges. Wedges and juice should fall into the bowl.

Reserve 2 tbsp of the orange juice and set aside. Cut the fennel into half rings. Heat 1 tbsp oil in a pan and fry the fennel, garlic, and spinach with the orange juice for about 4 min. Add salt and pepper to taste.

Meanwhile heat 1 tbsp oil in a nonstick pan and cook 2 veggie burgers on medium heat for 4 min. on each side. Repeat with the remaining oil and burgers.

Remove the sweet potato fries from the oven. Coarsely chop the basil and toss with the fries. In a bowl, toss sautéed vegetables and orange wedges to combine. Serve the burgers with the vegetable salad and sweet potato fries.
