Waldorf Club Sandwich

A classic salad is transformed into a satisfying double-decker sandwich.

> 1/4 cup walnuts
> 3 stalks celery
> 1/4 cup raisins
> 2 tbsp mayonnaise
> 1 tbsp lemon juice
> 12 slices whole-wheat bread
> 1 Granny Smith apple
> 3 tbsp light cream cheese
> 1 cup shredded iceberg lettuce


Coarsely chop the walnuts and dry-toast them in a pan for 2 min. Let cool. Finely slice the celery. Mix the walnuts with celery, raisins, mayonnaise and lemon juice. Season with salt (in moderation) and pepper. Meanwhile, toast the bread. Cool slightly. Cut apple into quarters, remove the core and cut the quarters into thin slices.
Divide the salad over 4 slices toast. Spread the remaining slices with the cream cheese. Arrange half of these bread slices over the salad, cream cheese side up. Top with the apple and lettuce. Sprinkle with pepper to taste. Top with the remaining toast, cream cheese side down. Skewer sandwiches with toothpicks to keep them together and cut in half.
