BBQ Roast Pork Tenderloin Sandwiches

Think of this as the ultimate cheat's pulled pork. Slather with barbecue sauce and make sure you have plenty of napkins.

Ingredients

> 1 1/2 lbs Nature's Promise pork tenderloin
> 1/2 cup honey barbecue sauce
> 1 large red onion, halved and thinly sliced
> 1 1/2 tbsp red wine vinegar
> 6 grinder or sub rolls
> 3 cups shredded lettuce
> 2 large tomatoes, sliced

Place a cast iron skillet in oven. Preheat oven to 450°. Season pork with salt and pepper, brush with barbecue sauce and place in hot skillet. Roast for 15 min. Reduce heat to 400°. Flip pork and brush with barbecue sauce. Roast for a further 15 min., or until pork reaches an internal temperature of 145°.

While pork is cooking, place onion in small bowl and toss with vinegar. Set aside.

Remove pork from oven and allow to rest, covered loosely with foil for 10 min. Turn off oven. Place rolls on baking sheet and place in oven to warm through.

Thinly slice pork and halve warmed rolls. Layer each roll with ½ cup shredded lettuce, sliced tomatoes, marinated onion and pork slices. Serve, passing extra barbecue sauce.

Tips

Use warmed garlic bread instead of sandwich rolls for a more substantial meal.
