Watermelon Ice Pops with Mint

A fun and healthy alternative to sugary popsicles. Dip them in iced vodka for a grown-up treat.

Ingredients

> 2 limes, juiced
> 3 tbsp granulated sugar
> 6 1-inch thick slices watermelon (about 1/4 watermelon ) quartered
> 1/2 cup fresh mint, roughly chopped
> metal or wooden skewers

Steps

Combine the lime juice and 4 tbsp water in a saucepan. Add the sugar and bring to a boil. When the sugar dissolves, remove from heat. Allow to cool.

Skewer the melon slices and place them all together in a bowl or tray that fits into the freezer. Pour the syrup over the melon slices, turn them a few times and leave them in the freezer for 1 hour.

Sprinkle with mint leaves and serve.
