Whole-Wheat English Muffins with Avocado and Fried Egg

Ingredients

> 1 ripe avocado, pitted and peeled
> 2 tsp lemon juice
> 2 Nature's Promise® Whole-Wheat English Muffins, split
> 2 tsp olive oil
> 4 large eggs

To a small bowl, add the avocado and lemon juice. With a fork, mash until mostly smooth. Season with salt and pepper to taste. Toast the English muffins.

In a 12-inch nonstick skillet, heat the oil on medium. Add the eggs to skillet and cook 1‒2 min., until whites are mostly set. Cover skillet and cook 1 min., until yolks are desired doneness. Season with salt and pepper.

Divide mashed avocado among toasted English muffin halves and spread in even layer. Using a spatula, place 1 egg on each English muffin.
