Air Fryer Quesadilla with Salsa-Stuffed Peppers

Use an air fryer to quickly cook this easy bean and cheese quesadilla in under 10 minutes. For a fun alternative to chips, serve with mini peppers stuffed with guacamole-salsa.

Ingredients

> 1/3 cup vegetarian or traditional refried beans
> 1 (8-inch) flour tortilla
> 2 tbsp shredded Monterey Jack cheese
> Cooking spray
> 4 mini bell peppers
> 1/4 cup guacamole-salsa

Preheat air fryer to 375°F. Spread the refried beans in an even layer on the tortilla. Sprinkle the cheese on top and fold tortilla in half. Coat air fryer basket with the cooking spray. Place quesadilla in air fryer and cook 6–8 min., flipping once halfway through, until cheese is melted and tortilla is warm.

Meanwhile, halve the mini bell peppers lengthwise, removing pepper stems and seeds, if desired. Fill each one with the guacamole-salsa. Cut cooked quesadilla into wedges and serve with peppers.
